Certification Asia Coconut Cocktail

Ingredients

90ml coconut rum

120ml fresh pineapple juice

60ml fresh lime juice

60ml coconut cream

Handful of ice

Pineapple slices and toasted coconut flakes to garnish

Method

Combine coconut rum, pineapple juice, lime juice, and coconut cream in a shaker with ice. Shake well until chilled. Strain into two glasses over fresh ice.

Garnish with a pineapple slice and a sprinkle of toasted coconut flakes.

Serves 2 (because things are always better when shared)

The non-alcoholic version
